Fast & Fabulous Hot Fudge Sauce

As fabulous as it is fast, this is perfect over just about any ice cream.
Makes about 1 1/2 cups
Ingredients
- 1/2 cup SCHARFFEN BERGER natural unsweetened cocoa powder
- 1/2 cups heavy cream
- 1/2 cup plus 1 tablespoon packed dark brown sugar
- 1/4 cup (1/2 stick) unsalted butter, cut into 6 pieces
- 3 tablespoon granulated sugar
- Pinch of salt
- 1/2 teaspoon pure vanilla extract
Directions
Pour the cocoa powder through a coarse strainer set over a medium bowl to remove any lumps.
Bring the cream, brown sugar, butter, granulated sugar, and salt just to a boil over medium-high heat in a medium heavy saucepan, whisking until the sugar is dissolved. Reduce the heat to low and boil, whisking frequently, for 2 minutes. Add the cocoa powder and whisk until smooth.
Transfer the sauce to a bowl and whisk in the vanilla. Serve hot. (The sauce can be refrigerated for up to 3 days. Reheat in a double boiler over low heat, whisking frequently.)
