Fun with Nibs

Nibs are roasted, husked cocoa beans. They are unsweetened, pleasantly bitter, and as intensely chocolate as any substance. Their flavor is marvelously deep and powerful. They resemble nuts or coffee beans with fruitiness, tannins, and spicy hints of cinnamon and clove. Because they have no sugar, their flavors are easier to discern on the tongue than chocolate.

 

Directions

  1. Add cocoa nibs to your favorite trail mix. If you're making it yourself use dried sour cherries, dried blueberries, toasted almonds, and lightly salted sunflower seeds.
  2. Add nibs to your favorite recipes for muffins and scones.
  3. Top oatmeal or other hot cereal with nibs.
  4. Cocoa nibs are fantastic added to a classic mole sauce.
  5. Use them to coat the rims of tea cups for serving hot chocolate or the rims tall glasses for iced coffee.
  6. Finely grind the nibs and mix with an equal amount of coarse sugar, like turbinado, and use to sprinkle over desserts.
  7. Add nibs to biscuit-style shortcakes and serve with berries.
  8. Use nibs to garnish the sides or tops of cakes.
  9. Add nibs to streusel mixtures and crumb toppings.
  10. Top ice cream, sorbet, or sundaes with a coarse or a fine dusting of nibs.
  11. Sprinkle coarsely ground nibs over strawberries, blackberries, and/or raspberries that have been sweetened with a little sugar. Or try them over fresh or poached pears or peaches.
  12. Add nibs to a peanut butter and honey sandwich.
  13. Stir into pancake or waffle batter. Or cake batter. Or quick bread batter.
  14. Use nibs in savory salads as you would nuts.
  15. Add nibs to chocolate mousse or other smooth, creamy treats.
  16. Add to cookie doughs, such as chocolate chip, oatmeal raisin, and almost any biscotti.
  17. Add a few to coffee beans when you are grinding them.
  18. Sprinkle finely ground nibs over a hot cappuccino.
  19. Flavor custards, puddings, sauces or whipped cream by steeping nibs in the heavy cream or milk that you will be using. Strain before using.
  20. For a different kind of chocolate chip, add nibs to ice cream toward the end of the freezing process.
  21. Coarsely grind nibs with toasted sesame seeds and use for a topping of vegetables sautéed in butter.
  22. Add finely ground nibs to crepe batter, they are especially nice in buckwheat crepes.
  23. Add to a mushroom sauté.
  24. Add a small handful of nibs to your favorite tomato pasta sauce.
  25. Add to brownies and other cookies instead of nuts.
