Green Salad with Nib Vinaigrette

The nibs add a great crunch and a surprising depth of flavor to this salad.

Serves 6

 

Ingredients

  • 1/4 cup finely chopped shallots
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon chopped fresh tarragon leaves
  • 1 tablespoon SCHARFFEN BERGER cacao nibs
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 3 tablespoons olive oil, preferably extra-virgin

  • 5 cups finely shredded romaine lettuce hearts, washed and spun dry or other greens, like baby spinach.

Directions

Whisk together the shallots, vinegar, tarragon, nibs, salt, and pepper in a large bowl. Whisk in the oil.

Add the greens and toss to coat. Transfer to serving plates and serve immediately.
